Since its inauguration in 2014 by the visionary Chef Tanka Sapkota, Forno d’Oro in Lisbon has been internationally recognized for its extremely light pizza dough which is fermented for 36 hours, and for its selection of craft beers using seasonal products from Italy and Portugal in an environment that preserves tradition.

The pizza dough at Forno d’Oro, enriched with Barbela wheat flour from Chef Tanka’s farm, provides a remarkable texture and flavor to the pizzas, elevating the gastronomic experience.

How to Enjoy True Cucina Italiana
Eating Italian is an act of love, respect, and… tradition.
- Never try to change the recipe.
Some were born centuries ago. Others, like mine, took 34 years to take shape. An Italian recipe is like a masterpiece: you don’t paint over it. - Honour simplicity.
In Italian cuisine, less is more. Every dish carries centuries of tradition. It doesn’t need embellishment, it needs soul. - Respect the order of courses.
Antipasto, primo, secondo, dolce, caffè. It’s a ritual, not a marathon. Each step has its own time and flavour. - Do not cut the pasta.
Pasta is made to be twirled, not chopped. Cooked al dente, served whole, and that’s how it should be enjoyed. - Parmesan with fish or seafood? It’s a no.
Cheese speaks loudly. Fish and seafood whisper. The voice of the fish must be heard clearly. - Bread with pasta? Only at the end.
Bread is for making scarpetta at the end. Until then, hands off. - Eat bruschetta or pizza with your hands.
It’s direct, it’s authentic, it’s Italian. Knife and fork? Only if absolutely necessary. - Drink cappuccino only at breakfast.
Very kindly put: after lunch or dinner, never. A cappuccino is a “good morning” gesture, not a farewell. At the end of a meal, Italians ask for an espresso — short, strong, perfect. - Pasta is not a side dish.
It’s the star. It’s served as a primo piatto, not alongside meat or fish. - Cooking is a sacred act. Eating is an act of gratitude.
In Italy, the one who cooks gives. The one who eats receives. Both deserve to be honoured.

I am Italian at heart, with more than three decades of training and practice, but my blood is Nepalese — a land of respect, humility, and honour for traditions.
No Nepalese who loves cooking would ever dare to disrespect the sacred laws of the Italian table.
