In 1999, it all began with passion and determination.

The Come Prima restaurant, located in the emblematic Lapa area in Lisbon since 1999, is recognized for its excellence in Italian cuisine, especially in truffle dishes under the leadership of chef Tanka Sapkota, Knight of the Truffles of Alba. With a cozy atmosphere, it is  award-winning nationally and internationally, the restaurant stands out for its use of seasonal, organic products, offering an authentic and quality gastronomic experience.

The restaurant, open since 1999, occupies a traditional building in the heart of one of Lisbon’s most emblematic neighborhoods, Lapa. The space is recognizably a national reference, especially in truffle tasting. Chef Tanka Sapkota still keeps the amount he had to pay for one of the largest truffles in the world secret, weighing 153 kilos, which he acquired in Alba in 2018.

In the gastronomic scene, white truffle is one of the most expensive and appreciated products by haute cuisine chefs. It is no coincidence that the Nepalese chef holds the title of Knight of the Truffles and Wines of Alba in a list of only 20 in the world with this honor. The chef insists on marking the truffle season at his restaurant every year, usually served with homemade, organic fresh pasta or egg.

In the ranking of the 70 best Italian restaurants in the world, Come Prima justifies its name “as before” in a kitchen where seasonal products, preferably organic, are used in a variety of classic or more creative Italian dishes. Homemade, organic fresh pasta made on-site with organic eggs and selected flour and slow food risottos accompany a series of dishes such as ossobuco with boletus, black pork ragù, or Milanese veal. The classic tiramisu is the star of desserts on a menu also featuring both Portuguese and Italian wines.

The restaurant works with the best producers who strive to bring authentic and quality products. The space is divided into two floors and several rooms in a cozy, relaxed, and informal atmosphere. Come Prima, a reference in the restaurant world, particularly Italian gastronomy, prides itself on the numerous national and international awards that honor a team that works with one goal in mind: the best possible experience for the customers.

Authenticity and respect for the product, simplicity in cooking, and hospitality are the chef’s motto.

How to Enjoy True Cucina Italiana

Eating Italian is an act of love, respect, and… tradition.

  1. Never try to change the recipe.
    Some were born centuries ago. Others, like mine, took 34 years to take shape. An Italian recipe is like a masterpiece: you don’t paint over it.
  2. Honour simplicity.
    In Italian cuisine, less is more. Every dish carries centuries of tradition. It doesn’t need embellishment, it needs soul.
  3. Respect the order of courses.
    Antipasto, primo, secondo, dolce, caffè. It’s a ritual, not a marathon. Each step has its own time and flavour.
  4. Do not cut the pasta.
    Pasta is made to be twirled, not chopped. Cooked al dente, served whole, and that’s how it should be enjoyed.
  5. Parmesan with fish or seafood? It’s a no.
    Cheese speaks loudly. Fish and seafood whisper. The voice of the fish must be heard clearly.
  6. Bread with pasta? Only at the end.
    Bread is for making scarpetta at the end. Until then, hands off.
  7. Eat bruschetta or pizza with your hands.
    It’s direct, it’s authentic, it’s Italian. Knife and fork? Only if absolutely necessary.
  8. Drink cappuccino only at breakfast.
    Very kindly put: after lunch or dinner, never. A cappuccino is a “good morning” gesture, not a farewell. At the end of a meal, Italians ask for an espresso — short, strong, perfect.
  9. Pasta is not a side dish.
    It’s the star. It’s served as a primo piatto, not alongside meat or fish.
  10. Cooking is a sacred act. Eating is an act of gratitude.
    In Italy, the one who cooks gives. The one who eats receives. Both deserve to be honoured.

I am Italian at heart, with more than three decades of training and practice, but my blood is Nepalese — a land of respect, humility, and honour for traditions.
No Nepalese who loves cooking would ever dare to disrespect the sacred laws of the Italian table.
